A. Cake crust using Mikko Pre-mixed Flour:

1. Preparation materials:

+ 1kg of pre-mixed Mikko dumpling powder;

+ 1 pack of dry yeast (available in powder packs);

+ 390ml of water or fresh milk;

+ 2 tablespoons of vinegar;

+ 3 tablespoons sugar (optional).

2. Implementation steps:

+ First, you take out 2 tablespoons of flour (for sleeves, non-stick), then pour flour, dry yeast into a large bowl and mix well for yeast to mix into the dough.

Then add 390ml of water or fresh milk to the powder mixture, mix well. Tip: you add 3 tablespoons of sugar to the crust, which will help enhance the flavor of the crust.

+ Next, you pour 2 tablespoons of flour on a cutting board, put the dough just mixed, and knead vigorously until the dough is smooth, soft, smooth, about 20-25 minutes.

After kneading, form a round dough into a large bowl, cover with food wrap and incubate the dough for 30-45 minutes.

+ 100g sugar.

+ 1 pinch of salt.

+ 200ml of fresh milk without sugar (can be replaced with filtered water).

+ 1 tablespoon cooking oil.

2. Implementation steps:

– 370 – 380ml Water or fresh milk;

– 1kg Bicycle ready-mixed dumpling powder;

– 2 tablespoons vinegar.

2. Implementation steps:

Add 1 packet of dry yeast to 380ml of water or fresh milk. Stir the mixture until dissolved. Then you add the mixed yeast juice to the dumpling dough (remember to take out 2 teaspoons of flour to make the dough)

Next, use your hands to knead the dough vigorously and evenly for about 20-25 minutes until the dough is smooth.

Then, roll the dough several times. Next cut the dough and shape it (use flour to keep the dough from sticking to your hands). Place the cake on lined paper and let it rest for 35-45 minutes.

+ After the incubation is complete, you add the prepared filling and cover the dumpling shell. Steam the cake for about 20 to 25 minutes. (Remember, before steaming you bring the water to a boil, add 2 tablespoons of cake vinegar to make the cake whiter.)

D. Dumpling meat filling:

1. Preparation materials:

This recipe works for 20 servings of 65g each.

+ Lean pork shoulder: 800g

+ Red onion: 100g (chopped)

Boil 5 eggs and cut them into four parts.

+ Put in a bowl of pureed lean meat, shiitake mushrooms, cut mushrooms, vermicelli, onions, red onions, green onions, 3 tablespoons fish sauce, 1 teaspoon seasoning powder, 1 teaspoon oyster sauce. Use your hands to mix the ingredients well.
